contracts, always
email for clients that we've been doing work for for years, but a clear confirmation on scope and costs
legally binding is probably a relative term. I got screwed by one of my early clients with a "I'll sign it if you want, but you realize if I don't want to pay I won't." And, like a fool, I still did the project and lost 15k.
contracts are great, but you it is not an end all. Good relationships and working with people you trust are what matters most.
