Ah, fuckit - I've answered this question like three times on NT/QBN already, but once more won't hurt.
MANCHEGO is my favourite all around cheese - young manchegos are mellow and creamy, middle aged ones give any Cheddar or British stock cheese a run for their money and are great in sandwiches, salads, or cooked - whilst older varieties span the gulf between sharp, zingy mature cheeses and the (imo, repulsive) blue ones.
