So what you do is, move all the files to your server, and leave just the index page directing to your server. then you explained what you did and that they have till friday to pay or the site has to go down on this friday at 8pm, till they do.
After one week from firday, you will have the message "SITE DOWN DUE TO NON-PAYMENT " like subimage suggested, and you will leave it like that till they pay.
I just recently came from a similar situation, there is no way around it, you have to put your foot down and tell them how it is, and that there is no negotiation, you did your part, now its time they do theirs..
