This is one I've done many times before, always get rave reviews:
THAI TILAPIA
Tilapia grilled with lemon, olive oil, s/p and a little red pepper.
While that's grilling (you can also prepare this ahead of time), saute 4 cloves garlic and a couple tablespoons (how spicy do you want it?) of Thai chili paste in a pan for a minute or so. Add 1 can coconut milk, about 3 tbsp. rough chopped ginger, juice of 2 limes, and about 3 tbsp. roughly chopped cilantro. Reduce heat and simmer for about 15 minutes (no trick to this, you just don't want the cilantro and the garlic to get funky).
While doing the sauce, do up any kind of basmati rice (add a little cinnamon and basil for a nice extra touch).
Serve rice in the middle of a large dinner plate, top with grilled tilapia, and pour liberal amount of sauce on top. You might want to dust it with a bit of red pepper. The whole thing takes about 30 min. to prepare. It's the only thing I can cook that's not just simple grilling, and I made it up myself. It's sweet, spicy and super tasty.
This would go rly well w/ your jicama salad.
