It would, but if you keep the anti-aliasing crisp and make it a decent resolution it shouldn't be apparent, and becuase its a photoshop pdf it should still be a small enough file. It would need playing around with... trying out different sharpnesses of type and different resolutions, but it should manageable. I've processed pdfs for CD artwork with 4pt type on through Photoshop and it comes out perfect.
If your CV is black and white you should be able to do a 300dpi file for not much kb.
