Don't wait forever... wait until after the 15th to see what is new then get what you need. Two monitors is great with a MacBook Pro... though you are still spending some serious cash. For the money, I don't think that the Mini is a good deal unless you must have a mac and cannot go over $600. Better off with an iMac in my opinion.
The iMac will support a second display with up to 1920x1200 resolution... so that is all but the 30". By the way, the Dell displays are much cheaper and just as good. I have a Dell display at home and there is no difference to me from my Apples at work.
