Your solution shouldn't be a product of your choice of hosting provider, nor is it dependent on the flavour of OS you prefer. It worries me that you're fretting about 'breaking out' the Windows machine - imo, you're making it sound like you might be biting off more than you can chew.
My personal experience extends as far as OScommerce, which I wouldn't recommend if you're not at all techie, nor would I recommend it from a client's ease point of view. It's certainly very capable, just not very basic-easy and super-user-friendly. If you're only after a few product lines, a simple Paypal system might well be the best to go, otherwise, madirish is known for being a somewhat competent human being, so trust his advice.
It would probably help if you supplied a couple more details about your project (number and complexity of product lines, payment methods required, size of company etc).
Beyond this, I take it you've used the QBN filter?
