when you say identity what do you mean? Just a logo? A whole system, typeface colour palette, look & feel.
All their print materials: packaging, menus etc?I'd charge per day, or it you think it won't take that long, by hour.
In these kind of cases sometimes it's better to negotiate a decent print budget so you can get some nice work out of it for the folio. Plus a chichi london bakery will want some pretty swanky packaging, print work
