I shoot with a Canon 30D set at ISO 800 and use prime lenses (50mm f1.4, 60mm f2.8, 8mm f3.5). Primes are generally much faster as they offer wider apertures and have less elements for the light to travel through. You will need to be able to get close to the subject though.
Having a lens with image stabilisation is good too. I have shot with a Canon 70-200mm f2.8 IS and my 30D and it perfomed beautifully in low light while also giving a really good range.
