they have a solution for this problem.. you can set up to 4 email aliases at a time in your mail preferences on the .Mac website). Just create a new email alias every so often, and use those for signing up for stuff that will attract spam....and keep your main address more secret...
I don't think you can change your main address as it is your account username...but you could always sign up again with a new member name/email if thats what you really want to do?
