"Though I suppose it's not exactly professional to be like "so, how much money you got to give me anyway?". I guess you really just have to judge for yourself what financial position the client is in based on the information they give you. Could be a little difficult in some cases?

the name of the game is controlling expectations. that way no one is expecting something unrealistic, and it also allows you to look as though you are going above and beyond.
the saying goes: when in doubt, don't over promise and under deliver. under promise and over deliver.
