As for your mpeg question, you really want to be using .flv, flash 8 can create this for you. I find you get best results from importing a .mov, or better yet, if you have it, use squeeze to create the .flv.
As for placing things (your video) in the center of the stage, well, use the code in the above tutorial to work it out.
