First, evolutionists don't believe we evolved from apes, they believe that we share a common ancestor with modern apes. So, assuming this is true for the sake of argument, the common ancestor of both humans and apes could have been very humanoid. Anyway, YEC's, Day/Age, & Framework Creationists (I would consider myself of the least category) do not believe that modern humans evolved by any sort of gradualistic unguided process. The evidence doesn't support gradualistic evolution, it supports long periods of stasis followed by the abrupt appearance of novel body plans. So the evidence supports a sort of computer algorithm with novel phyla appearing very suddenly like the execution of new functions in the genome.

As for Adam & Eve, there are some who see them as representing "humanity" since Adam translates to "human" in the original Hebrew. So, when Adam rebelled against his creator, it was humanity who rebelled. Others believe Adam and Eve were literal perfect humans prior to the Fall. The hominid species we find in the fossil record could be simply extinct animals and humans, like with Neanderthal who many scientists consider Homo Sapien but due to diet, environment and genetics, had a the bone structure that they had. So, there are many variables to consider and interesting explanations.
