as much as it would be fun to go after her client and take down their site, i would probably advise against it. i'm assuming they paid her, and tasking down their website hurts them more than it hurts her.
so far, you mentioned that you have sent polite emails. maybe the next step would be to send less friendly emails. if you did the graphics, remind her that is she didn't hold up her end of the contract, then the copyright to those images still belong to you, and that you will contact the client about their use of your copyrighted material if she doesn't pay you promptly. if she doesn't respond with a check, then take to the client about copyrights and see if they won't put some pressure on her. if nothing happens, then that's the appropriate time to take down the site.
