the bleed is area to make sure that WHEN it's cut, the final cut print NEVER shows any white space, only printed matter. So, you have your .125" bleed that will be unused. Usually, you'll include crop marks or cut marks. the document size generally doesn't matter, they'll cut or fold it where ever you tell them to.
