according to a dietitian i know, stir frying is good because oil mixed with water doesn't get to be hotter than water boiling temperature.
Oil used alone gets much hotter and that's where carcingogenic or at least hard-to-digest effect of frying comes about. So, as long as there's water mixed with oil in the wok, your food stays healthy.thanks for the input guys, let's keep'em coming!
