using the double boiler is def the way to go. also, the higher the proof the better, as it's the water that is doing the bad stuff with regard to taste/color. you can get the same results with heat in about a half hour, and the color will be a lovely jade.
i got a little electric burner to use, as i've got a gas stove as well. i'll keep you posted as to my results.
