Haku is a boy. if you re-watch the original Japannese versions you will see a better picture of who Zabuza is and who is Haku.Zabuza was exiled from his village as he slaughtered the entire class of pre-Gennin Shinobi when he wasnt even in the test.
also the origin of Haku is explained a great many times thru the entire run thru of Naruto all the way til the current episode [ep195] you will see flshbacks of Haku and Naruto.
anyways...
wwhen Zabuza meets with Haku he explains that in return for him teaching him the ways of a Shinobi, he wants in return all and anything he desires, which in turn looks like he has Haku dressed as a chick but he is a guy.
scary...but a common visual in the animes from japan.
