I think that you can put the work into your portfolio but I am not a lawyer and don't really know.
If this is that kind of company, you should be looking to move on. If you worked with decent folks, they would be more understanding that you want to work for your own dreams and not theirs. Be nice, be honest and give them plenty of heads up but move on. Doesn't sound like greed is what motivates you. If they treat you bad, move on.
As soon as you realize that you can't win, get out of the game... at least in poker and stocks.
