We've done a couple of degree show reports on the Transportation Design course at Umeå on Car Design News...might be worth looking through these (the reports cover the Product and Interaction design projects a little too):

Thye seem to have a really good theoretical background to it all... with a lot of research activity going on as well.
This year's degree show is on in a couple of weeks..
