HumanMale, download samples from sites like http://dpreview.com and http://stevesdigicams.com (i think Steve has raw samples as well) and play with sliders in photoshop, see what you're getting and what you can develop from each camera.
I will prolly stick with pentax because it is about to get shake reduction in new models soon, but miss the material quality I was getting from canon.
