You shouldnt shut it down ever really - no point... just use Sleep. You can set the Macmini to Sleep at a set time in Preferences, or set it to Sleep after certain period of inactivity..
You can use the program Awaken to have iTunes play a playlist for a set time (and set volume), as well as wake you with a playlist at another volume (and with fade-in)at set times.
