It sounds like you have a very good case. At this point all the evidence points towards them taking your work. If they aren't responding and haven't given you any money, and they are stupid enough to leave traces of your work on there, then you can do whatever you feel is right for you. A friend of mine shut down a clients entire site taking all his work and deleting it from their server like you said, and they ended up paying him. At this point it just depends on how nice you want to be about it.
