Buy something that you can upgrade, you can upgrade a Mac Mini, but you have to crack open the case and it does not go back on correctly. A gig of memory will do you just fine. If i'm running photoshop, I like to have at least 30 gigs of hard drive space free also, photoshop uses that free space, well maybe not 30 gigs, but it seems to run smoother.
