sushi is expensive because you have to have really nice fish in order to be able to eat it raw, not because it's fashionable.
before it was fashionable it was still expensive. it is more probable that sushi is fashionable because it is expensive than that it is expensive because it is fashionable.
and if you buy sashimi grade stuff and make it yourself it's not that expensive and not that difficult. and you may sit wherever you like.
