Definitely get the 1.25 GHz. The 1 GHz version is not much faster than the previous 1 GHz tower release because of a limited system bus speed.
I agree with you on getting a Mac. Most people who say Macs are slow don't know a thing about processer cycling and speed. It's not about the MHz!
And yes, the environment is ten times better than anything Windows could ever put out...
