maybe you could start off with what's vector graphics and what's not?
Make it simple. Teach them how to make a box or something. When they've learned how to make simple things, show them more advanced illustrations.
Personally, when I've learned simple things in one particular app, I always strive to become better and do niftier things, and since they're tech students I bet they think alike.
What's the purpose of the class? To actually teach them Illustrator, or give them an introduction to design?
