On OSX Server you can set sharepoints anywhere, or you can get third party software for OSX to do Mac/Windows/Linux sharing with versioning and permissions and stuff...... but with just standard OSX all you can do is share your own account, or setup an extra account to share with the Windows users (they see the Home directory of the account)...apparently...I havent tried it yet.
