I think there are compelling reasons to believe that God is the designer. Just one - it would require an uncaused being who is both Omnipotent and Omniscient to produce what we see in our universe and nature."why did He design a universe that appears to be filled with naturally evolving systems"

This question is rooted in a misunderstanding of what Creationists and ID proponents believe. We believe in microevolution (adaptation) within species, as the evidence for this is abundant. This is what science actually observes and what you and I see as well - creatures do adapt to environmental conditions over time. But, we do not believe in Darwinian Macroevolution (species to species, or "goo to you") because science has not observed this and the "evidence" is questionable at best. Additionally, this idea goes against confirmed scientific laws, like the Second Law of Thermodynamcs (this applies to both isolated and non-isolated systems). This law states that matter moves from order to disorder, the universe is losing usable energy over time. Macroevolution essentially states the opposite - that matter and life improve and become more refined. In addition, a purely naturalistic approach to origins cannot account for the human consciousness and the related metaphysical realities: love, evil, and the ability to reason in general, etc..."or did He just kick it off and leave it to go it's own way, in which case we have both Creation and Evolution, and we're all happy..."

There are numerous reasons why we do not embrace "Theistic Evolution". Here are just a couple:1. For the same reasons we believe that naturalistic or "Atheistic" Evolution did not occur. Lack of evidence and conflict with scientific laws.
2. We believe that the nature required of the God who would create the universe would be one of method and order (a discussion in itself). But in contrast, Darwinism presents a very cruel, disorderly system in survival of the fittest.
3. Finally, I believe that if we are to properly apply the rules of textual criticism to the book of Genesis, we find that it is written as historical narritive and that it stands up under scrutiny as a reliable historical document.
