no, you can't really check color from that unless it's something like a two color job and you have a 4 color photo in there.
with a pdf proof, make sure that copy and photos are in place and not chopped off or cropped incorrectly. Make sure copy didn't get scrunched somehow (it happens), make sure anything that crosses from one page to another lines up correctly. Make sure fonts are okay (soometimes, even if you send the fonts, some don't get linked and it just shows as garbage or a default). Make sure bleeds are bleeding.
