What is chorizo? chorizo is amazing. That's all you need to know.

- I've only tasted chorizo from Spain, though, not the Mexican variety.Continuity

Just out of curiosity, for all of you from Mexico:
What would be the definitive, traditional national dish?
Getting a bit tired of my current culinary répertoire, and I'd like to have a go at something new.
Please don't say tamales, though, I don't think I'd find everything I need here in Munich. :\

^Continuity. "Chiles en Nogada". I believe it's because it incorporates the colors of the flag, green, white and red.
It usually looks something like this.
when done right, it's quite delicious.
of course enchiladas and mole are other good dishes.
maybe a pozole or a birria. depends on the type of meat and spices you have available.- Cool! Thanks! :)Continuity
