If you're looking for a foodie trip go to the north coast Trujillo to Tumbes. You'll get more variety than in the Andes.
The jungle is always good too, try Iquitos.
Lemme know if you want a list of dishes to try.- Meant to post the extended version:

I never had the gunine pig or lama, but I had Anticuchos, I think it's beef heart on a kabob with potatoes. I'm sure you'll have the classic peruvian ceviche which is incredible. The seafood is insanely delicious. Try a Causa and a Cusqueña beer. But if you're into it, try the chicha, it's a fermented corn drink, made from spit and who knows what, but it drunks you up, I stayed way the hell away from it. lol

Don't eat the Cuy, it tastes like shit (not chicken!)
BBQ'd Beef Hearts are amazing especially when you're blind drunk and have a hunger on... As expected Alpaca tastes pretty average, but kind of like tough Beef so it's not that bad...Really I don't think Peru is known for it's cuisine, but the beer is good, and you can drink sugar cane juice form stalls on the side of the road which is very tasty!

I've never had shit before but I can say that cuy is to rabbit what duck is to chicken. So if you're not even willing to try rabbit stay off the brown stuff (cuy and shit).
