So I'm not all pro and making my own broth or noodles yet, but I am having a lot of fun creating some delicious bowls of instant ramen from my local Japanese market. I picked up a couple of these from a recommendation of an employee at the market.

Last Sunday's creation was Shoyu style and had the following toppings: nori, steak, green onion, mushrooms, huy fong garlic chili sauce and sesame seeds.

^ My wife is Chinese. She calls Enoki Mushrooms "See you tomorrow" Mushrooms because they come out the other end of you the next day looking the same as how they went in.

Crazy how popular ramen exploded here in california in the last year, I have like 4 spots walking distance from my place now, people waiting in line outside for ever. Everyone is a self proclaimed ramen connoisseur, there are internet fights over who is the best ramen shop in the area etc.
A ramen documentary is playing on the theaters as we speak, there are ramen festivals, it's nuts.
What changed I wonder?
Is it like that where you live too? Just curious- education and demand for healthy fastfood is showing results in the market?uan

Made this recipe. It's amazing. I get handmade noodles, and all other ingredients at my local Asian market.

@Miguex, same here in Manhattan. We've had ramen joints in town, but now there are at least 4-5 in very close walking distance from me, and they're all new within the last 3-4 years. New ones opening still.
I'm obsessed, and I do want to make some miso ramen. My favorite is the one with pork chashu and corn in it, and the curly noodles. Some places call it Sapporo Ramen, some just call it miso ramen. That's what I want to learn how to make.
Oddly, the huge asian market in K town doesn't have plain ramen noodles, but they have dozens and dozens of ramen bowls.

- Mono I always use these. Outstanding noodle texture, and a great base flavor of broth. I focus on the toppings man.HijoDMaite
