I'm designing a book, and wanted ask if any knew the correct way to present the following info..
should it be
Joined Company: 2002
or
Joined Company - 2002
not really sure which is correct?

Colon is correct. I'm not sure when it happened, but at some point people started using hyphens and em/en dashes as substitutes for colons, and then they became acceptable. It's kinda a pet peeve of mine, but it's really prevalent these days. Universities often use an em dash after their school and follow up with a city name, for example. I understand using the dashes in prose, because that's how they work in adding side comments and such, but in simple information, I feel it's best to stick to the classics. Conclusion: colon.

It should really be:
Joined the company: 2002
unless there's a lack of space, why omit 'the'. Also, why should 'company' be capitalised?

If the book is about the company, in that context you can drop "the company" entirely:
Joined: 2002
Or the more human
Joined in 2002.

I joined the company, "X" in the year 2002 where my responsibilities included but were not limited to "Y".
