Objective C or Html5? Might help.
I've not done any OBJc stuff, just html apps with phonegap so far.

The Lynda video series for iOS 5 is nice IMO.
I'd go the Objective C route instead of Phonegap/Appcelerator/etc route. Depending on your app, you can hit the limit of the WebView pretty easy... at least in my case I did, when I wanted some special scrolling/gestures.
The books I picked up originally were:
(this one is a bit out of date now, but had examples I learned a lot from, and really the big difference in 5.0+ is ARC and Storyboards, both of which you can choose to use or ignore)

The resources Apple provides (code sample, guides, etc...) are priceless. If you don't have an Apple Developer's account yet, I would get one — the content alone is worth $100/yr.
