Objective C or Html5? Might help.
I've not done any OBJc stuff, just html apps with phonegap so far.

The Lynda video series for iOS 5 is nice IMO.
I'd go the Objective C route instead of Phonegap/Appcelerator/etc route. Depending on your app, you can hit the limit of the WebView pretty easy... at least in my case I did, when I wanted some special scrolling/gestures.
The books I picked up originally were:
(this one is a bit out of date now, but had examples I learned a lot from, and really the big difference in 5.0+ is ARC and Storyboards, both of which you can choose to use or ignore)
