I like 2 and 4.
2 might get a bit tricky at small sizes - detail might get lost.
I like 4 a lot, but something about it feels oddly familiar. It's the one with least (or none) references to the name (Third Coast) - I think if you push it further, it could work nicely.

Hey nice work! It's clear that each of these attempts are pretty strong, hence the lively debate here. I think all of these have legs, and you're doing a great job of giving your client some strong work to decide from.
I personally think #4 is the strongest, minus the warped type.
I know people in Texas are all about being from Texas, Don't Mess with Texas and all that jive shiite. Even though the rest of the country wants nothing to do with the george bush lovin, red state, you might get some mileage out of a texas silhouette (as suggested by others) in the design. If they're a Texas company, serving Texas clientele, they're gonna love it.
Most here are suggesting #1, #4 (and I agree). the two designs using strong black contrast. I really like the reversed white type on black background. if you use bold serif type, black background and some sort of texas iconography, that your client will be creaming their own coffee.

I love 2, but there will be too many questions about the lack of coffee imagry. 1 and 4 are the best for that option, text on 4 needs work and the single bean at the top of 1 concerns me, but i really like the etching style and the font.

4 is my favourite - simple and clean although I agree about adding a third trail of steam.

#2's mark is definitely the most memorable. I'd love to see you post it with gramme's type suggestions.
The detail in the waves might need simplifying for reproduction and usage purposes... but still it looks super cool :)

I like #1, the swollen vagina represents coffee roasting very well. jk. I like #2, I would work on sizing the bird differently, bu the waves are very pretty.

4 could be nice if the mug rim was more coast-like, and you worked in some subtle or not-so-subtle reference to the number 3.

1: a vagina? super nice but work on the vagina.
2: you put storks in your coffee? super hot detail on the waves but how will that translate small? the stork looks like an afterthought.
3: not getting it.
4: nice. real nice. tweek the txt on the curve just a bit though.
5: not so much.
