how about d40x with a better lens?

I have not checked, but if it has no internal autofocus like the d40 then they would be MF only. That might be a pain for someone just starting out.

I just got my father a D80 for xmas, so we'll see how that is (I opted against the D40 due to the lens). I liked the way the D80 feels over the 400D, although the 40D feels pretty good.

"As with the D40 the D40X doesn't have an built-in focus drive motor which means it can auto focus only with lenses which have their own drive motor (AF-S and AF-I lenses). The lack of a drive motor can be seen by the missing mechanical focus drive pin on the lens mount (see images below)."

If you intend to buy lesnes and/or a better camera down the line - look at those now and decide which manufacturer you like better.
Either price or qualilty-wise.
Then choose the brand based on that.If you don't plan to upgrade or add to your collection then just get whichever one you like using in your hand.
I personally prefer Canon's interface and ubiquity. Most of my friends shoot Canon, so it's just what I know.
Nikon's interface, to me, is rather confusing.

I am planning on probably add a lens or two, but nothing too crazy. It'd be shooting models against blue screen (which I'd still hire a real pro, but would like to work towards that) as well as some outdoor spaces.
The difference in cost between the models I am looking at looks like approx $500 - from D80 to 40D to D300
I'll look into lens cost, but is there any rule of thumb here? Canon has tons more lenses, right?

The thing is you arnt really going to know until you go into a store and pick up all the cameras your looking at and snap off a few shots to see how the camera feels. All the cameras you have mentionead are all capable of capturing very decent photos, its going to come down to how much you know about photography, thats going to decide how good your photographs are. I would work out your max budget and then spend roughly as much on a lens as you would on the body. If you are aiming at purely studio work look into primes.
If you do you research you will find common lens combos among semi pro shooters. A lot of people have similar combos for good a reason, best value/quality.
You will find a lot of canon shooters have 10-22mm or 17-40L + 70-200L with a few other primes/macros. I would expect you would find a similar trend in the nikon camps. This is becuase they are excellent quality and reasonably priced. Ask around the forums and you will find what people are using as a lot of these dudes have taken the long expensive upgrade path to get the setup they have.

400D, the D40 is a lower level. if you are looking for the equiv in Nikon then the D80.

There are some good deals on D80s, just got one with the 18-135 lens kit for $1150.
Very happy so far.

I posted this as a note but I think it's worth a formal reply--be careful when bidding on camera gear on eBay! Especially the kits that come with a memory card, tripod, extra lens, etc. Many of these sellers will ship you a grey market camera and hope you don't notice. These cameras are not covered under the manufacturer's USA warranty. If you bid on gear on eBay make sure you confirm it's a USA model before they ship it to you.
