Disclaimer before lapidation: I am a web guy, and I' am triyng to handle print stuff
Ok, I must set up a page in illustrator for an AD on a review:
the specs are:
bleed 303x216 mm
Finished work: 297x210mm (A4)
Type Area: 272x184mmSO, if i had understand i have to set the document size to 303x216mm, do the design into the A4 size, and be careful that that all the visual stuff fits in the Type Area.

blled is the area where the printer will cut the edge of the piece. that is you want a bit of waste so that is the cut is out of line by 0.5mm you dont get any white.
work to the edges of the "bleed" size but make sure all the important stuff fits inside the A4 area (text etc)

trim size: 297x210mm (A4)
live area: 272x184mmPersonally I build my files to the trim size and let my bleeds hang off the page. I also tend to refer to these measurements as listed above. It helps keep things straight.
