i kinda like 5...
it would looks really cool and a stmp. kinda woodblock print style.
it's a little hard to read... but so is "ushi" stacked on top of each other.

3 4 and 5 are SOOOO out. The circle trio are really nice and clean. More high end. The 1st couple are more fun yet also really nice. So it depends on what the client is going for.

like upscale mexican fast food. it's hard to describe. don't think taco bell or baja fresh. think starbucks.

ok... to be honest i think yer stuck with something a bit to cliche... as long as the name sais sushi it doesn't have to contain attributes such as chop sticks etc... if the plan is to open many restaurants the branding will be the most important.... create something that you can bring in to the restaurants interiors etc

develope 3 and 4 for sure. tight them up so they are clear...maybe work with theat lil' fish icon in 4...maybe its not a fish...some could find that offending. but regardless, i think these are definitly more unique. 1 and 2, i feel are expected/predictible. i really dig the last 2 but as you can see, there are readibility issues.
just my thoughts.

Number 2 is my favorite by far. I think if you made the chopsticks or the word sushi red, and moved or sized down the the TM it would be money.

no offense, but considering chipotle is owned by mcdonalds, the owner should seriously reconsider their audience and marketing techniques, 'cause even if the sushi logo is representing more of a prefab style quickness, it really should not be targeted towards a chipotle fan. almost the opposite in fact...
all that rambling said...i am definately liking 6 and 7. very solid.
