My mass storage tops out at 160-ishGB and I find it helps to be able to do big system backups, like saving my entire home folder before reformatting. Besides a couple versions of this and some other extra things, I agree, what's the point? If you're not hoarding lots of video, audio, or other big deal data, then the only benefit, at least in my eyes, is the ability to not have to delete things as frequently.
I say get double your internal size and you'll be plenty happy.
