Drag your application folder to the dock or make a folder of all your media players (or any other group) and than drag that folder to your dock... this will help you save space.
I love the dock. On the 17' Powerbook and with a smaller dock it takes little room and is a nice shortcut. I hated the OS 9 App thingy. Alt + tab in Panther is such a better chooser.
It's all preferences though and there is no right or wrong way. Panther has tons of cool ways to make your preferences work...
