At this level in Canon's range Its all about the type of photography that you want to be doing. Its exactly like the 1D vs 1Ds choice.

The 1D is APS-H (1.3x crop), 10.1MP, 10fps great for sports, reportage, news where the fast continuos shooting speed and extra reach due to the crop are useful. Whereas the 1Ds is FF, 21.1MP, 5fps and more suited to studio, portrait and landscape work where a crop factor would work against you. Also you don't need as many MP on the 1D as the images it is designed to take are normally for magazines/newspapers and not blown up to billboard size as they often are with fashion and advertising work.

So if you are into sports/reportage/news buy the 7D you get 1.6x crop and 8fps. If you are leaning towards studio/portrait/landscape the get a 5DMkII with FF and a few more MP.

The thing to watch as mentioned above is lens choice. If you are buying the 7D and intend to be on an upgrade path to the 1D then if you purchase any EF-S lenses these will not fit the 1D (or 5D/1Ds). EF-S lenses can only be used with APS-C bodies.
