As long as you have a good idea of the scope of the project, quote a flat fee, not hourly. Make sure your contract states explicitly what is expected of you, and additional work will require a newly negotiated fee. Also make sure usage is completely clear. Is it just print? How long can they reproduce it? 1yr, 2yr? If they want to own copyright, charge 150% to 200% of your original fee.
Get 1/3 up front, 1/3 in the middle, and the remaining 1/3 upon completion.
