I am an introvert and do not like it.
How do I break out of my shell and become a person who can say things and be easy going?
How do people act like this and act so free and natural?

by simply not worrying about what anyone else thinks about it and a sprinkle of natural ability with the humours

Don't try to change it. The first step is to find a way to accept your introvertness. Focusing on your dislike of it will only create more uneasiness. The goal should be to be comfortable with it, you will see that this in itself will make you more easy going with others.

have you tried acting / improv classes? it is a good way to let your controlling part relax because you are playing a role.
Might not influence your everyday life but it is a good way to see what other parts are inside you. this is at least my experience.
a good teacher is important.

Introverts tend to get drained in group or social settings and need time to recharge. While extroverts feed off of it.
If you’re trying to be less of an introvert practice on improving your social skills incrementally. That could be small talk with one stranger a week or finding a shared hobby with others so the conversations are more interesting to you and come easier. (That hobby could be improv in your case.) But the key is to “practice”.
You’ll probably always be an introvert but an introvert who can better handle social settings.
