Saw this - maybe Processing is the better way?

Processing is a great tool for really customizing everything about your data vis. you can export to pdf and refine further in illustrator.
d3.js has hundreds of readymade data vis styles that will get you something pretty cool with minimal time.
I'd say Processing is the way to go if you're looking to create stuff like your examples. This guy is great: http://blog.blprnt.com/

First two examples look like Processing, due to volume of data points visualized. Last two could be just Illustrator.
Processing is a great tool, and the people we've worked with that code it have all been great too. It's a strong community.
D3.js is a good library for in-browser visualizations but won't give you as much flexibility as Processing.

Is there a way of processing without knowing code?
Excuse my ignorance, but something like the - square space - platform...
It's a simple CMS system where you literally drag and drop, then tweak colors, fonts, spacing, etc...?

Standard tools with give you standard results. If you want scatterplots, bar graphs, etc. then D3.js (for web) or Tableau can handle large data sets.
If you want to test standard representations on a small scale, there's always Keynote.
For anything more bespoke, and more compelling as a visualization, you have to go Processing IMHO.
We're working on a dataviz project right now, and the Processing devs (http://diskcact.us/) have built in a simple UI for all the color and layout variables we need to adjust. It's sweet!
