Your experience in the industry would seem to be entirely hypothetical or you've really lucked out with clients. Your "good client" is practically a unicorn.

Not all work goes into a folio.
Only show the kind of work you want to do.
If someone else worked on the project then credit the agency and the other people involved and your role on the project.
I don't believe in crappy work, it's what YOU make of the project.
You don't need massive budgets or fancy clients to do good work. Sometimes a client can ruin a project but a good client will trust your judgment and let you do your job to the best of your ability.

I do not put anything in my portfolio anymore, and I don't take any jobs that require that I need to show a portfolio. It's what young kids do after college because they need a job, or what someone maintains because they are looking for a job or fear of losing their current one.

How much of your work is all yours? Some people put work in their portfolio that they only art directed and went to one meeting about. ALL OF MY WORK IS MY WORK.
Does good work pay your bills or do you take on crappy projects and clients that pay well to subsidize "good" work? GOOD WORK PAYS MY BILLS. BAD WORK PAYS MY BILLS.
