I tried making a new illustrator document and it still disappears. I inserted a different illustrator doc and that one disappears too. WTF this must be something really simple I am missing

which versions of each software are you using?

"Acrobat > Preferences > General > Accessibility...
...at the top: "Replace Document Colors" toggle off...Worked for me anyway - the symptoms are the same.
I inadvertantly set it this way when trying to find a method by which I could change the background colour from the default grey; then, for one reason or another, forgotten what I'd done.

Probably a bit too obvious, but...do you have it on a non-printing layer?

i figured it out. there's something that happens when you click file>place or the shortcut instead of making an image box and placing it directly into it. fuckin weird but at least it's over with. thanks for the help

In Illustrator (your art file), Window > Attributes > uncheck Overprint fill.
