Holy fuck I'm on a roll...
So, I've been working on a 44 page brochure what is outrageously thumbnail heavy and the client has been changing the images left, right and centre.
Rather than opening up every RGB jpeg and converting to a CYMK ps .eps - I put over 300 images in the doc.
They finally signed it off and now I have the ball ache task of A) converting all the images and B) replacing picture.jpg with picture.eps.
How would you tackle this please?

Just export a press-quality PDF and convert everything to CMYK in the output. No need really to convert each image, in my opinion.

Any particular reason you want to save the CMYK files as EPS?
Can't you batch-process all the images to CMYK, saving (not renaming) as 100% JPEG and then update from InDesign?
Or, and I will get flamed for suggesting this, export a X-1a PDF from your RGB artwork. Depending on the source this may do the job in one with ache-free balls. I've done this many a time...

Common practice is to just retain the full RGB info and get the most out of your CMYK on the press. The old conversion technique is as outdated as Quark, in my opinion.

If your printer is crap and really needs the files changed to CMYK, batch convert in Photoshop first.
Then, select all files that need to be updated in the links palette and click the update icon (bottom of palette, second from right).
If you've changed the name of the file you will have to select the file and press ok for every one).

Like everyone already said. Change to CMYK on the output. You should still is to talk to the printer if possible, and ask for color profiles to use on the export settings.

Hold on, there's a trick!
Replacing: Make a package of your document, so you have all the Links in one folder. Then convert all your files using a PS Action and batch process it (save in new folder). Then, back in InD, select all files you want to replace and open up the menu, find "Replace with folder", select folder containing EPS files and in the bottom of this window, you can type in a new suffix. BOOM!
