I really don't mind vertical video. Makes sense when I'm watching on my phone or tablet. Maybe youtube should get with the times already and optimize for alternate aspect ratios.
The only thing that sucks is when someone switches orientation part way through the video and you have to watch most of the video sideways.

I think phones should keep recording in horizontal mode even when holding it vertically. your camera crops so much information with it records vertically

Because people hold their phones vertically. Shooting vertical makes more sense to people. Who wants to hold their phone and watch a tiny widescreen vid on it. Vertical fits better obviously.

totally, in order to that, I think developers need to force phones to always record horizontally.The counter-argument to that could be "but what if I like vertical video and I want the video to fill up my screen when I hold it vertically"
Then you just double tap on the 16:9 video for it to scale up and zoom full screen on vertical mode. Yes, you won't be able to see 2/3rds of the capture, but you don't really cared about that in the first place. However, if you happen to download (or upload) the video outside your phone, then people will be able to appreciate the 2/3rds of the capture you recorded.
Simple.
